Banana peanut butter cookies

Ingredients:

  • 1/2 cup Morama Peanut Butter with Amaranth and Chia Spread
  • 1/2 cup honey
  • 1/3 cup mashed banana
  • 1/4 cup coconut oil
  • 1 whole egg
  • 1 tsp vanilla
  • 1 1/2 cup whole grain oats
  • 1 1/2 cup Morama Oat Flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Cinnamon powder to taste
  • 1/2 cup dark chocolate chips
  • 1/2 cup walnuts chopped

Instructions:

  • Preheat the oven to 395 F / 200 C and grease baking sheet with coconut oil.
  • In a bowl, combine peanut butter, honey, mashed banana and melted coconut oil. Mix well until a smooth dough forms. Add the egg and vanilla. Stir until all ingredients are incorporated.
  • Add baking soda, baking powder, salt and cinnamon and mix again.
  • Using a spoon, add oat flour and oats to the mix and stir until the dough is consistent. At the end add chocolate chips and chopped nuts.
  • Scoop dough ball with a spoon and place each ball on the baking sheet separated from each other as cookies expand in the oven.
  • Place in the oven and bake for 10 to 15 minutes or until the cookies become golden brown.
  • Remove from the oven and cool.
