Ingredients:
- 1 1/2 cup of Morama Chickpea Flour
- 1 tsp salt
- 1/4 tsp cayenne pepper
- 2 cups of water
- 1/4 cup olive oil
- Vegetable oil for frying
- Finely chopped parsley and sea salt, for garnish
Instructions:

Line two trays with parchment paper on both sides to create a "sling." In a bowl, mix the flour with spices.

In a medium saucepan bring the water with olive oil to boil. Lower the heat and gradually mix in the flour and spices mix, stirring until the mixture is thick and smooth.

Divide the mixture evenly between the two trays and smooth out with a small spatula. Cover with another piece of parchment paper and continue to smooth the surface. Refrigerate for at least 1 hour, or until completely done.

Heat 2 cm ( 0.8 inches) of vegetable oil in a large pot, at a temperature of 350 F – 360 F / 177C - 182C. While the oil is heating, transfer the cold dough to a cutting board and cut into strips.

Fry the strips in the oil, few at a time, until golden brown. Use a slotted spoon to transfer fries from the pan to a tray lined with paper towels, to drain excess oil.

Season with sea salt and parsley and serve immediately.
