French Fries

Ingredients:

  • 1 1/2 cup of Morama Chickpea Flour
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 cups of water
  • 1/4 cup olive oil
  • Vegetable oil for frying
  • Finely chopped parsley and sea salt, for garnish

Instructions:

  • Line two trays with parchment paper on both sides to create a "sling." In a bowl, mix the flour with spices.
  • In a medium saucepan bring the water with olive oil to boil. Lower the heat and gradually mix in the flour and spices mix, stirring until the mixture is thick and smooth.
  • Divide the mixture evenly between the two trays and smooth out with a small spatula. Cover with another piece of parchment paper and continue to smooth the surface. Refrigerate for at least 1 hour, or until completely done.
  • Heat 2 cm ( 0.8 inches) of vegetable oil in a large pot, at a temperature of 350 F – 360 F / 177C - 182C. While the oil is heating, transfer the cold dough to a cutting board and cut into strips.
  • Fry the strips in the oil, few at a time, until golden brown. Use a slotted spoon to transfer fries from the pan to a tray lined with paper towels, to drain excess oil.
  • Season with sea salt and parsley and serve immediately.
