Mini Gansito Cookies filled with strawberry jam

Ingredients:

  • 1/2 cup sugar
  • 1 cup Morama Pancake Mix
  • 1 Egg
  • 1/4 oil
  • 1/3 cup milk
  • Strawberry jam to taste
  • Frosting to taste
  • Melting chocolate to taste
  • Chocolate chips to taste

Instructions:

  • Preheat the oven to 350 F (180 C).
  • Mix the flour, sugar, milk and oil, then add the egg and mix well. Fill the baking mold cups to 2/3.
  • Place in the oven for 15 minutes, while preparing the frosting.
  • For the frosting: mix the egg and sugar (measure the sugar to be twice as much as egg), and start to stir on a low heat so that the sugar is well-integrated, once it is already, use the mixer to beat the mixture until smooth and stiff.
  • Remove the cookies from the over and cut them in half, adding jam and frosting in the center.
  • Melt the chocolate in a double boiler and top to cover (or submerge) each Gansito cookie. For the final touch, top with chocolate chips.
