Monster mini-pancakes

Ingredients:

  • 1 cup spinach
  • 1 cup non-dairy milk (soy, almond, coconut, etc.)
  • 2.8 oz (80 g) banana, mashed
  • Sweetener of your choice (Monk Fruit, Stevia, etc.)
  • 1 cup Morama Hotcakes Flour Mix
  • Banana
  • Chocolate chips

Instructions:

  • In a food processor or blender, blend spinach with milk. Set side.
  • In a medium bowl, mix the spinach batter with the rest of the ingredients with a spatula. Make sure you don't over mix.
  • Spoon a few tablespoons of the batter onto a preheated over medium heat nonstick or lightly greased skillet, forming small discs.
  • Flip the pancakes when numerous bubbles appear on the surface. Continue cooking until the other side is done and then remove from the pan.
  • Cut banana into small circles to imitate the eyes of the pancakes and top each slice with a chocolate chip in the center.
  • Place the banana eyes on the pancakes and serve with agave or maple syrup.
