Ingredients:
Dough
- 1 1/4 cup whole wheat flour
- 3/4 cup Morama All-Purpose flour
- 1 tbsp instant yeast
- 1/2 tsp cinnamon
- 1/3 - 1/2 cup warm water
- 3 tbsp maple syrup
- 1/2 tsp chai or gingerbread spices (optional)
Cinnamon nut filling
- 2 tsp cinnamon
- 3/4 cup walnuts or other nuts of choice, minced
- 3 tbsp maple syrup
- 1/2 cup soymilk
Instructions:

In a large bowl, mix dry ingredients for the dough. Add some warm water and maple syrup and start mixing. Add as much water as needed to get a smooth, non-sticky dough.

Knead for a few minutes, then transfer the dough to a bowl and cover with a towel. Let rest in a warm place for about 30 minutes.

Make the filling by heating soymilk in a small saucepan, then adding the walnuts, cinnamon, and maple syrup. Stir with a wooden spoon for a few minutes to create a smooth texture, set aside.

Preheat the oven to 360 ° F (180 ° C).

Once the dough has risen, flour a flat surface and knead the dough with your hands for about a minute, then roll it into a rectangular shape that should be as flat as one of your fingers (about ½ inch or 1.5 cm).

Gently spread the nut filling onto the dough, leaving a ½-inch border around the edges.

Now carefully roll the dough until you have a big, even roll.

Using a sharp knife, cut the roll into even pieces; They can be anywhere from ½-inch to 2 inches thick, depending on how you like it.
