Whole grain cookies

Ingredients:

  • 1 cup whole oats
  • 1 cup Morama Oat Flour
  • 1/3 cup raisins
  • 1/4 cup unsweetened coconut flakes
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp lemon zest (optional, but adds a delicious scent)
  • 1/4 tsp sea salt
  • 3 dashes of grated nutmeg (optional, but adds extra flavor if you don't use the zest)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup

Instructions:

  • Preheat the oven to 350 F / 176 C. Cover a baking sheet with parchment paper.
  • In a large bowl, combine oats, Morama Oat Flour, raisins, coconut flakes, baking powder, cinnamon, zest, salt and nutmeg, stirring to mix well until all the ingredients are incorporated.
  • Then add applesauce, maple syrup and chocolate chips to the batter. Stir well.
  • Use a cookie scoop to transfer the dough to the baking sheet.
  • Bake for 14-15 minutes, remove from the oven and let the cookies cool on the tray for about a minute. Then transfer to a cooling rack.
