- 1 cup whole oats
- 1 cup Morama Oat Flour
- 1/3 cup raisins
- 1/4 cup unsweetened coconut flakes
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp lemon zest (optional, but adds a delicious scent)
- 1/4 tsp sea salt
- 3 dashes of grated nutmeg (optional, but adds extra flavor if you don't use the zest)
- 1/2 cup unsweetened applesauce
- 1/4 cup pure maple syrup
Preheat the oven to 350 F / 176 C. Cover a baking sheet with parchment paper.
In a large bowl, combine oats, Morama Oat Flour, raisins, coconut flakes, baking powder, cinnamon, zest, salt and nutmeg, stirring to mix well until all the ingredients are incorporated.
Then add applesauce, maple syrup and chocolate chips to the batter. Stir well.
Use a cookie scoop to transfer the dough to the baking sheet.
Bake for 14-15 minutes, remove from the oven and let the cookies cool on the tray for about a minute. Then transfer to a cooling rack.
